Quick Mustard Chicken Breast

Well, I was in a rush and had to prepare something for my 15 year old. Did not had any time to go grocery shopping and therefore had limited ingredients in the fridge and cupboards. So, while checking the fridge I decided to make something up! Because that’s when the best food comes up! And I was right to do so, he just loved the rushed dinner and asked for more (unfortunately did not had more :)) )




as you can see in the picture, I had quite basic ingredients:

One chicken breast

One peeled potato

Basil and Parsley


Olive Oil

Salt and a spoon of lemon juice

Method of preparation: 

Preheat the oven at 200C.

Cut the chicken breast in half and spread some mustard in between, salt and olive oil. Also put the parsley inside the chicken breast. If you like the mustard you could spread some on top of the chicken breast as well.


Cut the potato in slices and add it next to the chicken breast.

Drizzle some olive oil on the products, add a pinch of salt and the basil leaves.


Wrap the entire casserole in foil and bake at 200-220C for 40 min!
