Very quick Potato and Parmigiano Fritters! I made this in under half an hour for my lunch as I hadn’t had time to go shopping and had lots of work to do and did not have enough time to spend in the kitchen for a proper meal. Anyway, here’s the recipe, hope you enjoy it!
one potato, peeled and grated
2 table spoons of flour
2 table spoons of grated Parmigiano
2 garlic cloves finely chopped
a few basil leaves finely chopped as well
heat the pan and put some oil in it (I use coconut oil)
mix all the above ingredients into a bowl
the batter might be sticky, so just put a little bit of olive oil on your palms before making the fritters
put them in the pan and fry until golden.
