Bergamo – Italy

A couple of years back, I visited the amazing city of Bergamo. If you haven’t heard or visited  this city before, it’s really a shame. It’s not far from Milan, approx 40 km away.  Actually, when you fly from London (or any other place) to Milan, some airways arrive at Milano Bergamo Airport.

This was a day trip to this city, so I did not really had much time to spend in the city but I do believe I had seen the best of it! And the pictures will confirm it! 🙂

I was very tired to be honest as I hadn’t had any sleep for 24 hours but it was all worth it! I travelled from London to Milan Bergamo with RyanAir as they had the cheapes tickets available. I spent a total of approx. £40 (return)

I strongly recommend you book your tickets in advance, maybe a month or so.. If you want to fly cheap.

Potato and Fine Beans Tarte

I probably mentioned in some previous posts that I do not like following a recipe when cooking.

Almost every time I simply create everything right then and there. It is a good way of challenging yourself!

This is what I’ve done this time as well! I was in a rush (as always) and had limited ingredients in my fridge. I also had some milk which had to be used otherwise would have gone bad (I hate throwing food away!!!)  So I came up with this tarte!

Ingredients:

Potatoes (3-4)

Fine Beans (100 gr)

Grated Cheese (70 gr)

2 eggs

A cup of milk

2 teaspoons of English Mustard

Salt

you can buy already made pastry sheets from your local shop or you can make it yourself (as I did).

Method:

Line the pastry into a desired dish and bake it in the oven at 200C  until lightly golden

In the meantime, peel the potatoes and slice them. Boil for 5 minutes in order to soften a bit.

Beat the eggs with the milk and add in the mustard. Do not forget to also add a pinch of salt and the cheese.

When the pastry is done, line the potatoes, add the “sauce” formed of eggs and milk, and in the end add the beans.

Bake in the oven for 30 minutes until everything is well cooked. (use a fork to see if the potatoes are soft enough).

Baked Salmon with Butter and Parsley

Working two jobs and being a mom, means I have very little time for other human things to do (for example take a long relaxing bath :D), so I try to cut down from my time spent in the kitchen. Because why not? It’s very much possible, and hey, let them do the dishes once in a while! 😀

I decided to go for the easiest and tastiest recipes, and today’s I am going to share one of them with you!

My favourite type of fish is Salmon. And I love it especially when is baked.
